Putting this collection of recipes together and creating this website has taken over 500 hours of time. Over 10,000 hours if you include time in the kitchen over my lifetime. That's not an exaggeration… “Why would anyone do this?”, you might wonder. It’s so that everyone I know, as well as those we don’t know, can enjoy ANY recipe I’ve ever cooked that can be considered worthy of recording and cooking again. Basically, the goal is to spread happiness to others in the form of food.
To me, recipes are meant to be shared, not kept secret. I will never understand people who won’t share their delicious creations with others. What’s the big deal? Trust me, your recipe isn’t too good to be shared. If you don't own a restaurant or plan to monetize your “secret recipe”, then share that shit with others! #Don’t be that guy (or girl). Or… whatever else you are… Not going there lol. Anyway, if I like your recipe, you’d better be ready to hand it over, or good luck getting invited to the next BBQ, lol. Food is communal and is meant to be shared with everyone. It's what brings people together. So, consider this website a “life gift” to everyone. I say “life gift” because it will continue to bring value, year after year. These recipes will also outlive me and be here for all future humans and eventually cyborgs. Who knows, maybe my future self will benefit from this website in another life 😉. Ok, I’ll leave that last comment as is and not delve deeper into that notion. Just wanted to sneak that in there.
Anyway, isn’t it awesome to have a super comprehensive cooking database that will continue to grow with super delicious recipes created over decades? Pretty cool, right? Yeah, you know it's cool. Your fucking grandpa, grandma, dad, or mom, certainly never created anything pertaining to cooking that was this cool, and they definitely didn’t have a name like spicyAFchef, haha. Most people die with all of their “super special top secret recipes” in their minds. All those years of cooking and recipes are gone forever. What a waste, right? I can’t pass away one day with over 10,000 hours of effort just burned to ashes. Quite literally speaking, burned to ashes. So that is why this website is being created and will continue to grow for the rest of my days on this earth. Honestly, you fuckers are lucky I came to Earth. My ass isn't coming back next time around. Some of you may understand what I mean, some of you may not. That's ok. It can remain encrypted for most. 😉
To be passionate about something, you have to come up with a foundational “why”. Otherwise, you have no real purpose for what you are doing and you eventually lose steam/motivation. So why do I do what I do? Sorry, that was a lot of “do”s, lol. When I ask myself, why the fuck am I spending hours per day to learn the art of cooking, only to be enjoyed for just a few moments of consumption? This “event” seems highly asymmetrical, does it not? Well, it is, so why would anyone spend 3 hours to cook something that is eaten in 10 minutes? Well, you better have a damn good “why” otherwise it actually doesn't make sense. Cooking is truly my form of meditation and where I find peace in this sometimes stressful world. To be honest, some days I simply chop veggies in the kitchen as a sort of mini escape from stress or worries. Sounds ridiculous but it really does work. Also, I think that everyone should offer the world something. A service, a gift, or whatever you can do to make the world a better place. For me, this comes in the form of cooking. The art of creating an adventure for the taste buds has been a personal pursuit of mine since I was about 12 years old when I started grilling. Fun Fact: We are the only living creatures on this planet that cook our food. In a way, this is what differentiates us from other animals and makes us human. So on a very deep level, food brings us together like nothing else and that's a fact. I personally love to be the creator of this “communal food”. Think about it... The biggest gatherings are always based on nothing other than food. This is why I take it so seriously as the resident chef in my circle of family/friends. We wouldn't want the ones we love most, to eat bland or bad-tasting food, right? So, yeah... Cooking is a serious business for me. I'm known to make the simplest of tasks in the kitchen a very complicated operation. It's my version of Hell's Kitchen. Sounds hectic and maybe it is, but it puts me in the flow state and I love it. Without cooking I would be lost on so many days of my life. In the same way, a DJ gets a crowd together with music, it's just a very gratifying feeling that is, and always will be in my DNA. It's a way to transfer my passion, efforts, and happiness to others. Very much in the same way an artist draws a painting for others to enjoy. Cooking is simply a form of art. Once you consider something art, it doesn't matter how long it takes because your goal is to make a masterpiece, not to save time. It’s a neverending pursuit of mastery. Once you shift your mindset, you can see why it is worth the effort. When you know how to cook, it doesn't have to be a holiday to have a party. The party is ALWAYS centered around food anyway. So learn how to cook, then you can throw a party any day of the year! This paragraph pretty much sums up my “Why”.
If I had to give a shout-out to one person who was an inspiration to me as a kid, it would go to Meta. You know who you are and you probably don’t even realize that you started off my interest in cooking around 12 years old.
Anyway, I hope these recipes serve you well. This collection is a product of over 2 decades of self-taught cooking. I haven't had any mentors or professional training. However, I'm happy to take on any "professional" chef who wants a kitchen dual, lol! Bring it!!! #challenge accepted.
